Observed cooked mushrooms sitting out at room temperature measuring at 55 degrees F. They are held in the refrigerated unit and near the grill (not refrigerated). Discussed keeping them all refrigerated or utilizing time as control. PIC will switch to time as control to allow storage of cooked mushrooms in 2 locations. The mushrooms had been out of refrigeration for less than an hour and a time stamp was placed on the container at time of inspection Emailed operator handouts on time as control.
