Cooked breakfast sausages observed with internal temperature range of 100-112*F while being hot held inside a container on the flat top grill. There was a wire rack between the grill and the container with sausages, and another wire rack inside the container. Per PIC, the sausage was cooked roughly an hour prior to inspection and hot held above the flat top. The sausage was reheated to 165°F at time of inspection. Advised PIC to remove the wire rack underneath the sausage container. Corrective Action: Corrected at time of inspection.

Cooked Sausage links observed with an internal temperature range of 98-116 while being hot held at the grill. Per employee, the sausage is received pre-cooked and it was reheated to a temperature above 165*F less than 2hrs prior to inspection. The sausage was reheated again to165*F then placed in a container over the flat top. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Discussed the temperature danger zone and potential hazards of improper holding temperatures. Corrective Action: Corrected at time of inspection.
