Observed a prep unit with a broken hinge causing the top to fully seal. Educated PIC that in order to effectively maintain their cold holding temperature, the top should be repaired to maintain a flush seal. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS foods in open top prep cooler. TCS foods included cut tomatoes, cut lettuce, tuna salad, meatballs, and sliced cheese. Internal temperature taken with internal prober thermometer registered 45-50*F. Per PIC all food was placed in unit under an hour prior to inspection for afternoon prep. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Ambient temperature of unit was measured using min/max thermometer, registered at 50*F. Equipment must be repaired to a state of good use and hold temperatures of 41*F or below before TCS foods can be placed in unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.
