Inspector's notes

Observed 55°F internal temperature, per probe thermometer, of raw salmon inside cooler beneath cookline grill. Per person in charge (PIC), raw salmon was placed into cooler day prior to inspection. Per PIC, no temperature measurement was taken within four hours of inspection. PIC unsure of why raw salmon temperature was above 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods shall be maintained at 41°F or below. All raw salmon improperly cold held was discarded at time of inspection. Recommended establishment not use corner of cooler drawer raw salmon was previously stored in until certain it can maintain 41°F or below. Corrective Action: Corrected at time of inspection.
