Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Inspector's notes
Observed a plastic tub of shrimp being thawed under 105'F running water in the prep sink at time of inspection. A pinkish hue had developed on the shrimp and was measured at 92'F via probe thermometer at time of inspection. PIC explained that the hot water was a mistake and relocated the shrimp to the walk-in to rapidly cool. Discussed proper cold-holding parameters with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed large plastic tub of frozen shrimp being thawed in the prep sink under 105'F running water. (See violation #22.) Discussed proper thawing methods with PIC. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.

Observed mop sink within establishment unable to be turned off. Handle would not close completely, rendering the plumbing fixture to be broken or otherwise in disrepair. All plumbing must be maintained in good repair at all times. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers (AVB). Corrective Action: Correct prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed large hole (1ft x 1.5ft) underneath 3-comp sink, adjacent to the mop sink at time of inspection rendering the are not smooth nor easily cleanable. Per PIC, they have a repairman coming to service the area schedule today, 8/23. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable.
