Inspector's notes

Observed TCS foods such as milks and cheeses in walk-in cooler at temperatures between 48°F and 59°F PIC stated the walk-in had been left open while transferring items into the walk-in cooler. After one and a half hours, the temperatures had not gotten closer to 41°F and TCS ingredients were moved to various functioning cold holding units in the facility. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed several time-and-temperature control for safety (TCS) items, including dips made with dairy, blanched peas and green beans, and cheeses with internal temperatures between 46-55 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Items were all located in a prep-style refrigerator that was holding at an ambient air temperature of 49'F with min-max thermometer. Unit may not be used for TCS items until repairs are completed and unit can hold cold at 41'F. Per person in charge (PIC), all items were placed in unit less than 1 hour prior to inspection. Establishment has numerous prep-style refrigerators and this unit is not critical to establishment's cold-holding capacity. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC contacted refrigeration company during inspection. Corrective Action: Corrected at time of inspection.

Cooked foods must be cooled from 135-70'F in the first 2 hours and from 70-41'F in the next 4 hours for a total of 6 hours of cooling. Discussed the importance of proper cooling with the PIC.
