Observed food employee put limes into a blender with bare hands to make ready-to-eat (RTE) fruit drink. Bare hand contact is not approved with RTE food items. RTE fruit drink that was contacted by bare hands was discarded by food employee at time of inspection. Discussed the importance of preventing bare hand contact with RTE foods with the person-in-charge (PIC). Reviewed the foodborne illness pathogens that can be transmitted via fecal-oral route. Corrective Action: Corrected at time of inspection.

Observed food employee pour fruit drink into front counter handwash sink. Handwash sinks shall only be utilized for handwashing. Handwash sinks shall be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities shall be maintained in a condition that promotes handwashing. Observed container of cooked rice sitting near the hot holding steam unit with an internal temperature between 73-115F. Per employee, the food had been cooked at 10am (observation made at 12pm) and was in the process of being cooled. At time of inspection food has not been cooled to 70F within 2 hours. Employee voluntarily discarded food during time of inspection (see embargo form). Do not attempt to cool food in a location where the ambient temperature could delay the process. To effectively reduce temperature, use the following methods: o Placing food in shallow pans. o Separating the food into smaller or thinner portions. o Using rapid cooling equipment (i.e. a blast chiller). o Stirring the food in a container placed in an ice water bath. o Using containers that facilitate heat transfer. o Adding ice as an ingredient.
