PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Facility was storing raw beef in the bottom of a refrigeration unit in the kitchen, internal temperature of the meat was between 48-50°F. Ambient temperature of the refrigeration unit measured 50°F. When asked, PIC stated that the food had been placed in the refrigerator approximately 2 hours before the inspection (11am). PIC moved the TCS food into a neighboring freezer to ensure the food was quickly returned to cold holding conditions (<41F for cold holding). Ensure all TCS foods are stored with an internal temperature of 41°F or less. Establishment shall not use the malfunctioning unit for storage of TCS foods. Correct By: Corrected At Time Of Inspection

Establishment had large, covered plastic containers of salsa being stored in the reach in prep unit with an internal temperature between 100-110°F. Per PIC, the food was prepared less than an hour prior to inspection. PIC moved the plastic containers into the freezer and uncovered them to facilitate proper air flow to allow efficient cooling of TCS foods. Provided hand out for cooling methods to establishment. Ensure all TCS foods are cooled effectively and cool from 135-70°F in 2 hours and from 70-41°F in 4 hours. Correct By: Corrected At Time Of Inspection
