Observed employee washing dishes by soap rinse sanitize for less than 5 seconds. Discussed with person in charge (PIC) Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturers specifications of submerged for 60 seconds and wash hands before taking clean dishes from the sanitizer to ensure clean hands are touching clean dishes. PIC rewashing the dishes correctly at the time of inspection. Corrective Action: Corrected at time of inspection.

Employee was washing dishes in soapy water, was rinsing the dishes and then dunking dishes into quat sanitizer, and then rinsing the dishes again and putting them on the drying rack. Instructed employee that dishes should be rinsed off after washing in soap and then allowed to sit, fully submerged in sanitizer for at least 30 seconds prior to air drying without rinsing the dish after submerging in sanitizer. Employee re-sanitized dishes at time of inspection. Dishes must be fully submerged in quat sanitizer with a concentration of 200 to 400ppm for at least 30 seconds, or per manufactures recommendations, and then left to air dry for proper sanitation.
