Multiple containers of veal stock with 7-26 prep dates and 8-9 discard dates, multiple containers of beef stock with 7-27 prep dates and 8-10 discard dates, and a container of chicken stock with 7-23 prep date and 8-6 discard date in the walk in cooler. All items were still within the 7 day time frame and the PIC corrected the use by dates. TCS food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41°F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. Corrective Action: Corrected at time of inspection.

Two containers of farro with 11-1 (todays) date marks in the walk in cooler. PIC stated that both items had been made about 4 days prior and discarded all items-see embargo form. Two cooked potato items date marked for use beyond 7 days (11-11 and 11-30) in the walk in cooler. The PIC properly date marked both items for use within 7 days.
