Inspector's notes

Observed shamrock cold holding unit near soda machines displaying ambient temperatures of 50°F. Verified temperatures of sealed sandwiches, milk, and cakes with person in charge ranging between 49°F and 51°F. All product was within time limits and were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed various TCS food/beverage items such as: milk, individual wrapped burgers, coffee creamer, and cheese sticks with internal temperatures ranging between 50°F - 51°F stored in beverage walk-in display cooler. Verified temperatures with PIC. Ambient air measured 50°F. Per PIC, cooler temperature was checked the night prior. PIC discarded items at time of inspection. Discussed increasing frequency of monitoring equipment temperatures to ensure proper cold holding of 41°F or below. Also discussed keeping TCS foods in alternative cooler until unit has been serviced and maintains 41°F or below. Corrective Action: Corrected at time of inspection.
