Inspector's notes

On cook line, in top portion of large open prep table cooler, TCS foods (raw proteins, cooked proteins, cooked pastas, cooked sauces) with internal temperatures of 45*F-47*F. Per employee, TCS foods were removed from walk in cooler and moved to cook line <3 hours. Employee moved TCS foods to walk in cooler and in bottom portion of prep table cooler to rapidly cool back down to the proper temperature. Repair company was called at time of inspection. Discontinue use of top portion or prep table cooler for storing of TCS foods until repaired. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

Inspector's notes

In two sections of open top prep coolers, observed TCS food holding over 41F including chicken stock/57F, marsala sauce/55F, cream sauce/51F, bleu cheese/51F, orzo/56F, gorgonzola/51F, fresh mozzarella/47F, and spinach/radicchio mix/48F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per staff, the foods had been out of temp for a limited time and were within safe time parameters. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Staff to use additional ice baths or container lids as needed to maintain proper temperatures. Corrective Action: Corrected at time of inspection.
