Inspector's notes
Observed TCS food in a reach-in refrigeration unit with an internal temperature on 62-65*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 65*F with a min/max thermometer. Per PIC all TCS food items had been in unit for at least two days prior to time of inspection. TCS food items included; gallons of milk, whole shelled eggs, deli meats, and cheeses. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC that no TCS food items can be placed in unit until repaired to hold temperature of 41*F or less. Corrected at time of inspection.

Observed a floor drain inside the employee bathroom with excessive food debris, sludge, and sugar build up. Observed small drain flies inside of the floor drain and flying around inside the bathroom. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Correct prior to next routine inspection.
