#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed blocks of salted butter with "Keep refrigerated" labels on the packaging sitting on the front counter of the establishment (internal temp 69-71*F). Person in Charge (PIC) stated that the butter had been removed from the fridge last night before closing and left out on the front counter to warm up to room temperature. Butter was left out for longer than four hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Establishment needs to get product testing to allow holding at room temperature for more than 4 hours. Discussed usage of time as a temperature control (policy needed) if they wanted to leave the butter out for no more than 4 hours without testing. Corrective Action: Corrected at time of inspection.
