Predefined Comment: Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Predefined Comment: Employees properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

In the front prep area observed a wiping cloth stored in Quat sanitizer with a concentration of 500 PPM. According to manufacturer’s instructions sanitizer shall have a concentration between 200-400 PPM. Person in charge remade the sanitizer at time of inspection. Sanitizer retested at 200 PPM.

Observed packaged sliced turkey/45-47°F, sliced ham/45-49°F in tabletop cooler across from the soda machine. Except during preparation, cooking, cooling, or when time is used as a control all Time/temperature controlled for safety (TCS) food shall be maintained at 41°F or less. According to person in charge some of the ham and turkey had been in the cooler overnight or since 9:30AM today. The ham and turkey were discarded at time of inspection. Discussed monitoring temperatures of TCS foods with probe thermometer frequently and keeping the thermometer in the cooler easily accessible/visible. Temperature of tabletop cooler measured at 50.3°F with min/ max thermometer. Discontinue use of tabletop cooler for TCS foods unless it maintains 41°F or less.
