Priority Foundation-3-501.15 (A), Pf: Cooling Methods. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. 3 pans of smoked macaroni and cheese found covered with plastic wrap on speed rack at an internal temperature of 85*F in food prep area. Per food employee and PIC, macaroni and cheese is heated to an internal temperature of 165*F and placed at room temperature to cool. For this process, it was determined that the product's temperature went unchecked as as it reached 135*F and started the cooling process. Per PIC, no other cooling techniques nor verifications are used to assure cooling parameters for time and temperature are reached. Use acceptable methods of cooling to assure TCS foods are properly cooled in the time and temperature parameters. Acceptable methods include: o Placing food in shallow pans. o Separating the food into smaller or thinner portions. o Using rapid cooling equipment (i.e. a blast chiller). o Stirring the food in a container placed in an ice water bath. o Using containers that facilitate heat transfer. o Adding ice as an ingredient. o Other effective methods. --------------- Pans of macaroni and cheese returned by food employee to heat source for proper reheating (i.e.-a minimum of 165*F for 15 seconds) and the cooling process restarted. When cooling,, routinely check products internal temperature with food probe thermometer. Food products must properly cool: • Within 2 hours from 135°F to 70°F and within a total of 6 hours from 135°F and 41°F or less. (When cooling, ensure that the food starting from 135°F reaches 70°F within 2 hours and reaches 41°F or less in 4 hours (for a total of 6 hours from the time it is 135°F to 41°F or less).
