The person in charge does not have a Food Service Manager Certification. A person in charge with a valid Food Service Manager Certification must be present at all hours of the operation. Obtain prior to the next Routine Inspection. Information on obtaining a FSM certification was provided at the time of inspection. Corrective Action: Correct prior to next routine inspection.

Observed the probing thermometer registering about 8 deg. too high when placed in a ice water solution. The thermometer was recalibrated to be at 32 Deg. F. in ice water. Please be sure to do this on a regular bases. Corrective Action: Corrected at time of inspection.
