Observed container of breakfast burritos cooling in the reach-in unit next to the hot holding units ranging from 44*F to 47*F using probe thermometer, verified by person in charge (PIC) with the lid on. Person in charge (PIC) stated they were prepared and placed in the unit 120 minutes prior to inspection. PIC had employee relocate container to walk-in to finish cooling. Corrective Action: Corrected at time of inspection.

Observed employee eat several fries at the French fry station on the cook-line. Employee then began to handle clean utensils and fry containers to scoop and serve the fries for service to customers, without washing hands. Inspector notified PIC. PIC counseled employee and will review the establishment's policy for eating and when to wash hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.
