Observed no paper towels at handwash sink across from ice machine, handwash sink on prep line, and at handwash sink in men's bathroom. Handwash sinks shall be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities shall be maintained in a condition that promotes handwashing. Person in charge (PIC) provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed reach-in cooler closest to the office not in good repair- measuring with an ambient temperature of 55 degrees F. TCS food items such as cooked shrimp, green sauce, and shredded lettuce measured with internal temperatures ranging between 50-53 degrees F. These items had been in the refrigerator for less than 2 hours and were moved to the walk-in cooler. Refrigerator will not be used to store TCS products until in good repair. Discussed cold holding. Alternative refrigeration available to operate safely. Corrective Action: Corrected at time of inspection.
