Observed an accumulation of dust and oil on and around the ceiling vents. Discussed with person in charge (PIC) that the vents should be cleaned regularly to prevent risk of debris falling into food or on food surfaces. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed in stand up fridge by dry storage packaged raw chicken and pork stored against each other. Discussed with PIC that raw chicken must be stored below or away from raw pork. Raw animal products must be separated from one another based on their minimum internal cooking temperatures with those requiring higher temperatures being stored at the bottom.
