Two small containers of chicken wings and one chicken nuggets holding at 118-125 F in standing on rollers speed rack hot box. As per employee they were cooked and then placed in box one hour prior. Person in charge discarded rather than reheat. Reviewed hot holding and how to check thermometer calibration using ice water at 32 F. As per person in charge she will cease using unit until unit can be maintained so as to hold at 135 F or greater.
