Observed employee cleaning equipment at 3 compartment sink by washing equipment and rinsing equipment then putting equipment away as clean without a final sanitize step. Instructed PIC that all food contact surfaces, and equipment must be washed, rinsed and sanitized with sanitized as a final step prior to allowing to air dry or store away as clean. Demonstrated how to properly fill 3 compartment sink to adequately clean and sanitize equipment. Corrective Action: Corrected at time of inspection.
