All savory kolaches are placed on time as control once they are baked and must have the time stamp of when they are made. Time stamps were added to kolaches. Observed cooling eggs in walkin. Employee said it was removed from the heat and placed in walkin 6.25 hours ago. Food was at 60F on the outside, and 120F on the inside. Talked to manager about cooling techniques, using smaller containers, and stir sticks. Ensure that cooled TCS foods get below 70F within 2 hours, and below 41F within 6 hours total.
