2nd Repeat Violation! In the tall reach in warmer, observed 2 pans of chicken holding at 115*F and a pan of rice at 125*F. Observed 2 fryer baskets with fried chicken sitting above the oil at 95*F to 110*F. On the prep line, observed a pan of fried breaded chicken at 128*F. All chicken was made within 2 hours and was reheated to 165+ prior to returning to hot holding. It was unable to be determined when the pan of rice was made and it was embargoed.

Observed the reach in warming unit holding at 130*F on the inspectors min/max thermometer. Unit's heat was turned up as high as it could go. The unit must be holding at 135*F or above at all times to ensure that the food inside remains above 135*F also. Please have the unit repaired or replaced. Until unit is able to maintain a temperature of 135*F or above, it cannot be used for hot holding TCS foods. Inspector will follow up with a re-inspection in approximately 10 days.

In the tall reach in hot box, observed a pan of cooked chicken at 120-130*F. Chicken had been in the box for about 30 minutes. Chicken was reheated. In the hot holding prep line, observed grilled chicken at 115*F and fried chicken at 115*F. Per manager foods had been there for about 30-60 minutes. Foods were placed on time as control to preserve the quality of the food. Foods were time stamped and will be discarded after 4 hours.

In the back hot holding unit observed cooked teriyaki chicken at 115*-120*F. Per manager the food had been in the unit less than 2 hours. Chicken was reheated to 165*F prior to returning to hot holding. All TCS foods in hot holding must be kept at 135*F or above.
