The 3-compartment sink had dirty dishes and equipment in all compartments so the sink could not be set up properly. The Person in Charge (PIC) was informed and instructed to empty and set up the sink properly. The wash sink was set up with soapy water, the rinse sink was emptied, and the sanitizer compartment was attempted to be used with non-food grade scented bleach. PIC was stopped and instructed to use food-grade chlorine sanitizer. The establishment did not have any on-site so an employee left, purchased bleach, and returned with the proper chlorine sanitizer. Test strips were used to confirm the concentration at the time of inspection. Discussed proper warewashing procedures with PIC and ensuring that ALL staff members are trained properly.
