Observed white queso stored in hot holding dispenser with an internal temperature of 86*f. According to PIC, cheese is left in container overnight while heat is turned off. Discussed importance of NOT leaving TCS foods to cool improperly in the danger zone. PIC discarded at time of inspection. Please ensure hot TCS foods are re-heated to 165*F and hot held at 135*F and above when hot holding.
