Observed 5lb of fat free milk holding 48F. PIC discarded the milk, as the refrigerator is holding 45F. A new container of milk was opened and will be held in the walk in refrigerator. Also observed a container of whipped cream cheese holding 44-52F. The cream cheese had been removed from refrigeration less than 2 hours prior and was put into an ice bath. Discussing adding more ice around the container, or placing it in a working refrigerator when not in use. PIC added more ice to the ice bath. TCS food items must be held at 41F or below when cold holding. Correct By: Corrected At Time Of Inspection
