Observed tomatoes and hummus inside prep fridge with an internal temperature of 46F. Person in charge states that items were put in there 30 minutes prior. Unit found to measure 50F, establishment has alternate forms of refrigeration. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed three door sandwich prep cooler with an ambient temperature of 51*F. Equipment must be at a temperature that holds food at 41*F or lower. Unit had some ice build up along fans and condenser. Operator unplugged unit to defrost and will check later in the day. Temperature control for safety foods had only ben in unit for less than 1 hour. Items were placed in walk in cooler until prep cooler has been fixed. A reinspection to verify that prep cooler is holding food at 41*F on or before August 18, 2023. Correct By: Correct Prior To Reinspection
