Mango pico de gallo, regular pico de gallo, cut cabbage, and cut lettuce-51-63F in the make line closest to the drive thru window. The PIC voluntarily discarded all items-see embargo form. Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of make line cooler was 51F. PIC removed all food items from the unit and stated that the unit would not be used until it is maintaining 41F or below. Establishment has sufficient refrigeration. Observed three cheeses, cut tomatoes, cut lettuce, and pico de gallo at both make-line units without discard time marks. Per the person in charge the food items were placed in the units an hour prior to inspection. . PIC time marked the cut tomatoes, lettuce, cheeses, and pico de gallo at the time of inspection and will discard any remaining after 4 total hours out of temperature control. Discussed proper “time as a control” procedures with the PIC and the importance of proper documentation. Corrective Action: Corrected at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection.
