Observed 15 trays of cooked pasta, thickly stacked, and tightly sealed on speed rack in walk in refrigerator, with no gap for air flow, and an internal temperature ranging 45-50*F. Pastas were dated as prepared on 4/7 and for discard on 4/9. Person in charge had cook discard pastas. Manager to coach team on cooling methods, proper use of ice bath and temperature monitoring for cooling pasta. PRIORITY VIOLATION-3-501.14 - Priority: Cooling.
