Observed no certified food protection manager present at time of inspection. It is the responsibility of the manager to ensure all food-handling employees obtain a food handler's certificate. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. --- Observed cooked olive salad datemarked 04/09 in reach-in unit in food prep room. Also observed smaller portions of same food item in tabletop cooler datemarked 04/09. All food items were embargoed and PIC voluntarily discarded item at time of inspection. Observed unmarked pitcher of cold brew coffee in reach-in unit located at coffee station. PIC stated cold brew was made on 04/12 and dated pitcher in question with the correct datemark at time of inspection. All RTE/TCS foods must be date marked within the first 24 hours of prep and sold or discarded after 7 days (including the day it was made as day 1). Discussed the importance of discarding all RTE/TCS foods after 7 days. Correct By: Corrected At Time Of Inspection
Core-3-304.14, C: Wiping Cloths, Use Limitation --- Observed red sanitizer bucket with quat and wiping cloth was reading 0 PPM. Quat solution shall be between 150-500 PPM. Person in charge made new solution and sanitizer was reading 300 PPM. Please ensure that test strips are used to measure the proper amount of sanitizer to avoid possible contamination. The ambient temperature of the unit was 48*F. Per PIC (person in charge) the milk is back stock and was unsure when the milk was placed in the Smeg fridge. Instructed PIC to discard the four gallons of milk. Instructed PIC to not place any TCS (time/temperature control for safety) foods or beverages into the cold holding unit. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Correct By: Corrected At Time Of Inspection
Core-3-304.14, C: Wiping Cloths, Use Limitation >>>Observed sanitation bucket next to hand sink that measured less than 150ppm of Quaternary ammonium. Instructed PIC to replace bucket with the correct measurement of sanitizer. Per employee the sanitation bucket was made earlier in the morning. When wiping cloths are stored in sanitizer solution, the solutions should be reasonably clean and maintained at the proper sanitizer concentration. Discussed with PIC when wiping cloths are used frequently the sanitizer should be replaced at a frequency needed to maintain proper levels. Quaternary ammonium shall be maintained between 150-400ppm.
