Observed employee moving cooked rice from rice cooker to a pot for hot holding and using a small bowl to transfer rice and using bare hand on top of cooked rice to help transfer the food to a new container, making direct contact with bare hand and cooked rice at the time of inspection. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Instructed employee to dawn gloves and use gloves or another approved barrier when handling ready to eat foods. Corrective Action: Corrected at time of inspection.

Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material. Observed soiled wet wiping cloths being stored in buckets of soiled water with a chlorine sanitizer concentration of 0ppm. Wiping cloths are to be stored in solution, the solutions should be reasonably clean and maintained at the proper sanitizer concentration. Per the PIC, the sanitizer solution is refreshed once daily. Reviewed sanitizer concentration and functional time limit of 4 hours for sanitizer solution in buckets. The PIC refreshed the the sanitizer solution in both of the in-use buckets. Core-4-802.11, C: Specifications-Laundering Frequency Observed soiled wiping cloths in use. Asked the PIC how often wiping cloths are laundered. The PIC stated that they did not launder them but discarded once they were too soiled to use. The PIC stated that wiping cloths were used more than one day and stored in sanitizer buckets overnight without being laundered. Reviewed the requirements for use and laundering wiping cloth used for food contact surfaces. Replace cloths and and launder daily or discard daily, or sooner if the cloths become soiled.
