Inspector's notes

Observed no hot water available in the entire establishment at hand sinks, prep sink, and three-compartment sink. Maximum water temperature available at the sinks was 68*F. PIC stated that Southwest Gas is doing a construction project on the corner of their property and surrounding street area and the gas has been turned off. Informed PIC that hot water is required in the establishment in order to be open and operating. Informed PIC that a reinspection will occur in 24 hours. Suggested PIC call the number left on the handout given to them by the company to find out more information. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Corrective Action: Correct in 24 hours.

Inspector's notes

Observed sour cream, in house salsa, buttermilk, and in house ranch (buttermilk) having internal temperatures of 50-53*F. Person in charge states these food items were transferred from the other refrigerators less than 2 hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection. 2ND REPEAT.

Inspector's notes

In one of the standing cooler and in the reach in prep cooler, observed: cut lettuce, cut tomato, raw shelled eggs, mozzarella cheese, nacho cheese, cooked chicken, cooked pork, cooked vegetable for soups and garlic in oil having internal temperatures of 49-61*F. Person in charge states all these foods were placed in the unit less than 4 hours prior to the inspection except for the garlic in oil which had been in the unit for that a couple days. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Observed the reach in prep cooler having an ambient temperature of 50*F. Also observed one of the standing cold holding (closest to the entry of the kitchen) having an ambient temperature of 48*F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Please do not store any TCS foods in these units until working properly. Corrective Action: Correct prior to re-inspection. Reinspection will be conducted on or before 11/15/2024.
