In the walk in cooler, observed a metal container of pre-portioned pasta with a date mark of 06/23/25. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

Discussed with PIC about ensuring such items are redate with the date they were pulled from the freezer to ensure items are not past their discard date.

Observed sliced cheeses, sliced and diced tomatoes, raw eggs, iceberg lettuce, portioned bags of sliced cooked chicken all with internal temperatures between 54 and 68 degrees Fahrenheit at the time of inspection. PIC had employee discard items as previous cook could not be contacted to ensure items had not been out longer than 4 hours. Cold holding prep table had air temperature of 36 degrees Fahrenheit and ice was observed on the back of where the food is stored. Neighboring unit is not operational, discussed proper icebath method for temperature control of food. Corrective Action: Corrected at time of inspection.

Items were on ice in a cold holding table that was not operational. Discussed ice bath use, and keeping ice and water to the level of the food and keeping the lids to the tables on and closed during the slow times. Kitchen employee discarded items at the time of inspection. TCS foods shall be held at 41 degrees Fahrenheit or below to prevent microbial growth. Correct By: Corrected At Time Of Inspection
