Observed shredded cheddar cheese, and Swiss cheese on the line, with ice only touching the bottom of the container, with an internal temperature of 50F. Per PIC, the cheese has been out for less than 2 hours. The cheddar and Swiss cheese that was improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
