Observed tray with muffin batter containing raw eggs stored above cooked eggs in the walk-in cooler. Informed person in charge (PIC) that all raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Cooked chicken, beans, and rice in walk-in cooler measured 46-48 degrees F internally, it was determined that the walk-in cooler was running warm at time. Person in charge said that they had noticed recently and had placed a service call already. Food items were moved to working cooler at time to hold until walk-in is repaired. Please ensure all time/temperature controlled for safety (TCS) food items are maintained at 41 degrees F or below when cold holding. Correct By: Corrected At Time Of Inspection
