Inspector's notes

Observed cooked breakfast sandwiches (bacon, egg, & cheese/sausage, egg, & cheese), cooked eggs, cream cheese, spinach with temperatures between 55 to 58*F at time of inspection. Per employee, all items were placed in the prep table the day prior to inspection. All TCS foods improperly cold held were discarded by person in charge (PIC) at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed water hook up near the mop sink with a y-valve with shut offs below the backflow preventer. Shut off valves may not be connected downstream from an AVB as contamination could occur. Chemical dispenser must have its own dedicated water line and an internal air gap back flow device installed. PIC removed shut-off downstream from atmospheric vacuum breaker at time of inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from atmospheric vacuum breakers. Corrective Action: Corrected at time of inspection.
