Observed salmon in reduced oxygen packaging (ROP) stored along cook line and in walk-in fridge. Chef stated fish was removed from the freezer yesterday and will be removed from the packaging today. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. Corrective Action: Correct prior to next routine inspection.

Observed large amount (50+) of fruit flies in bar. Person in charge stated pest control came out a few days ago but no treatment took place. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection. 10 day re-inspection required.

Inspector's notes
Observed deep tub of cooked chili soup in walk-in unit measured 45'F. Cook stated item was brought out around 12pm and was returned to walk-in unit at 12:30pm. Food item in question has been out of temperature for longer than 4 hours. Observed cooked bratwurst sausages (52'F) in reach-in cooler located opposite of deep fryer. PIC stated food items were brought out around 3pm and stored at ambient air temperature as it is establishment's preferred method of storage prior to deep frying bratwursts. Bratwursts have been out of temperature for less than 4 hours. Suggested adding bratwursts to time as control policy as it would be a better fit for establishment's operations. All TCS foods improperly cold held were discarded by PIC at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
