Observed the following hand drying stations to not be functioning and dispensing paper towels at the time of inspection. Hand drying unit by the prep area by the walk-in cooler and the unit at the dish pit area. PIC provided hand drying provision for handwash sink at time of inspection and installed new batteries for the units. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed residue and organic matter on the top panel inside the ice machine. Ensure the unit is cleaned with a frequency to preclude accumulation. In the walk in cooler, observed cooked pasta cooling but being covered with a lid. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
