Observed carton of raw whole shelled eggs stored directly above hermetically sealed packages of ready to eat (fully cooked) hot dogs. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. Person-in-charge (PIC) properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Discussed with PIC that meat packaging will identify the food item as "Fully cooked" if it is considered RTE, and can be stored with other RTE items. Corrective Action: Corrected at time of inspection. Repeat violation: 2nd consecutive.

Observed cartons of raw whole shelled eggs stored directly above hermetically sealed packages of ready to eat juices; also observed hermetically sealed packages of raw chorizo stored directly above raw fruits and vegetables and hermetically sealed packages of lunch meats, juices. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
