Observed dried food debris in the designated hand sink at time of inspection. Discussed hand sink requirements with PIC. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Corrective Action: Correct prior to next routine inspection.

Observed tamale soup in a large 10inch deep square plastic tub, date marked 1/21/2025, with an internal temperature ranging 45-47*F. Chef stated food was prepared yesterday over 12 hours prior to inspection. All foods must reach 70*F within 2 hours of reaching 135*F, and 41*F within 4 hours of reaching 70*F for a total of 6 hours to ensure proper cooling times and temperatures. Chef discarded of soup.
