Observed various containers of salsa made in-house in under-counter reach-in refrigerator in front of house (FOH) with internal temperature of 49-50F. Ambient air temperature of unit was 52F as measured with min-max thermometer. Please ensure all time-and-temperature control for safety (TCS) foods are held cold at 41F or lower. Person in charge (PIC) moved smaller containers of salsa to alternate under-counter refrigerator unit and larger containers of salsa to walk-in refrigerator. Per PIC, all salsas were placed in under-counter refrigerator unit less than 4 hours prior to inspection. Establishment has sufficient refrigeration to hold all remaining TCS foods cold.
