Observed container of cut lettuce from 06/22 (11 days ago) in the lowboy cooler at the far end of the kitchen. Informed person in charge (PIC) that RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Lettuce was discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Sanitizer in 3 compartment sink behind bar measured less than 50 ppm QUAT during inspection. It was determined that the solution was being diluted after the automatic mixing device dispensed the sanitizer. Solution was refilled (and not diluted) at time. Please ensure QUAT sanitizers are maintained between 150-400 ppm for effective sanitizing of wares. Corrective Action: Corrected at time of inspection.
