Observed a floor drain in the kitchen by the lockers that stayed full, didn't drain and did not convey onto the floor. Observed all other floor sinks drain and function properly. All food prep occurs several feet away from the drain and is separate from all food prep and storage. Per person in charge (PIC) they already had someone come and try and fix the drain and they will be back later in the day. Discussed with PIC all floor drains shall properly drain at all times and facility shall not convey sewage. Corrective Action: Correct within 24 hours on 5/21/26

Observed multiple containers of sliced tomatoes and sliced cheeses (pepperjack, cheddar, & provolone) that were prepped 2 hours prior to inspection with temperatures between 46 to 53*F in a prep table at time of inspection. Per person in charge (PIC), all items were prepped 2 hours prior to inspection then placed into prep table. Discussed with PIC about proper cooling methods and about placing prepped item in walk-in cooler to rapid cool at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
