Inspector's notes
Employee washing dishes and equipment did not have the sanitizer in the third compartment filled high enough to properly sanitize the equipment in the sink. The PIC instructed the employee to fill the sink with additional sanitizer and the employee did so. Ensure that equipment/utensils are exposed to chemical sanitizer for proper length of time according to manufacturer’s directions. Corrective Action: Corrected at time of inspection.
