Per manufacturer's directions, lactic acid/DDBSA sanitizer solutions for food contact surfaces must be maintained at a concentration of 272-700ppm. PIC remade sanitizer solution at correct concentration range and re-washed, rinsed, and sanitized recently cleaned utensils and equipment. Corrective Action: Corrected at time of inspection.

Observed leak coming from beneath the sanitize compartment of the 3-comp sink. Observed a large flat pan placed under the 3-comp sink to catch water. PIC stated that the leak has persisted for one month and a work order was placed to correct the issue. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
