Sanitizer was diluted by PIC to approved levels at time of inspection. Corrective Action: Corrected at time of inspection.

Priority Foundation-3-501.15 (A), Pf: Cooling Methods. Observed multiple trays of fried french fries in the walk in unit stacked in large plastic trays. The PIC stated that the fries had been left out to cool after frying for about 2-3 hours. The time they were cooked was listed as 10:54AM on the date marking of each container. Measured the temperature of the fries at the time of inspection at 60F five hours after they had been cooked. Had the PIC move the fries to the freezer to attempt to bring them down to temperature within the hour timeframe remaining. Measured temperature again at 45F and informed the PIC to store less fries in each container when attempting to cool and to also use the walk in freezer to bring them to correct temp after cooking. :
