Inspector's notes

Observed various time-and-temperature control for safety (TCS) foods including mozzarella cheese, ham, and sausage with internal temperatures of 46-48 degrees Fahrenheit in a prep-style refrigerator that was not holding cold. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), all items were placed in unit at 10am, less than 4 hours prior to the inspection. PIC moved existing items in service to walk-in cooler to cool and provided new items, for which a Time as Public Health Control (4 hours) system was prepared - inspector verified temperatures. Corrective Action: Corrected at time of inspection.

Observed cheese and pepperoni pizzas sold by the slice with internal temperatures of 102-110F. Per PIC, items were placed in the warmer at 11am, less than 2 hours prior to inspection. were part of a Time as Control policy and lacked the time stamps showing the times of removal from temperature control and times to discard. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.
