A couple of containers of pasta prepared at ambient temperature were tightly covered in saran wrap and aluminum foil. The PIC stated the food items were made within the last 30 minutes. The PIC loosely covered the pasta containers to allow for proper cooling at the time of inspection. Informed the PIC items prepared at ambient temperature must to cool to 41*F within 4 hours.
