Observed chopped tomatoes on the prep line measured at 48°F by both inspector and store thermometers. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per person in charge (PIC), tomatoes had been replaced about an hour ago. PIC placed tomatoes back into the walk-in to rapidly cool at time of inspection. Corrective Action: Corrected at time of inspection.

Repeat Violation Observed artichokes, shredded cheese, feta cheese in prep top cooler at a temperature of 50*F person in charge explained items were placed in cooler less than 4 hour prior to temperatures being taken. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrected at time of inspection. 2nd consecutive violation.
